Recipe for cooking pineapple meat.
Pineapple Chicken Stir-Fry,
Cooking pineapple with meat creates a delicious sweet-savory combination that's perfect in a variety of dishes. Here’s a popular recipe for Pineapple Chicken Stir-Fry, which highlights the juicy flavor of pineapple with tender chicken. This can be adapted to other meats like pork or shrimp as well.
Ingredients:
1 pound (455 g) chicken breasts or thighs, cut into bite-size pieces
1 cup fresh pineapple, diced (canned works too, drained)
1 red pepper, chopped
1 green pepper, chopped
1 onion, chopped
3-4 cloves garlic, minced
1 tablespoon fresh ginger, minced
2-3 tbsp vegetable oilFor the Sauce:
- ¼ cup soy sauce
- 2 tbsp honey (or brown sugar for a deeper flavor)
- 2 tbsp rice vinegar (or apple cider vinegar)
- 1 tbsp ketchup (adds a tangy sweetness)
- 1 tsp cornstarch mixed with 2 tbsp water (to thicken)
- Optional: a pinch of red pepper flakes for a hint of spice
Instructions:
Prepare the Sauce: In a bowl, mix the soy sauce, honey, rice vinegar, and ketchup. Stir in the cornstarch slurry to help thicken the sauce later. Set aside.
Cook the Chicken: Heat 1-2 tablespoons of oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for 5-6 minutes until golden brown and cooked through. Remove the chicken from the pan and set it aside.
Sauté the Aromatics and Vegetables: In the same pan, add the remaining oil. Add garlic and ginger, and cook for 30 seconds until fragrant. Add the sliced onion and bell peppers, and cook for 3-4 minutes until slightly softened.
Add Pineapple: Add the pineapple chunks to the skillet. Stir-fry for 2-3 minutes until the pineapple is heated through and begins to caramelize slightly.
Combine with Sauce: Return the chicken to the pan, pour in the prepared sauce, and stir well to coat everything. Cook for another 2-3 minutes, allowing the sauce to thicken and the flavors to meld.
Serve: Serve hot over steamed rice or noodles, garnished with green onions or sesame seeds if desired.
Tips:
- For Extra Flavor: Marinate the chicken in a little soy sauce, ginger, and garlic for 15-20 minutes before cooking.
- Other Meats: This recipe works well with pork or shrimp. Simply adjust the cooking time accordingly, as shrimp cook much faster.
This dish is deliciously balanced with the sweetness of pineapple and the savory richness of the sauce!
