 Atia-style banana flower curry is a traditional and flavorful recipe from Assam, India. It combines banana flower with spices for a delicious and healthy dish. Here’s how to make it:









Ingredients:


1 medium banana flower


1/2 cup chana dal (split chickpeas)


1 medium onion, finely chopped


2-3 green chilies, slit


1/2 tsp turmeric powder


1/2 tsp mustard seeds


1/2 tsp cumin seeds


2 cloves garlic, minced


1 tbsp ginger paste


Salt, to taste


1-2 tbsp mustard oil (or regular cooking oil)


Fresh coriander leaves, chopped (for garnish)



Preparation:


1. Prepare the Banana Flower:


Peel the tough outer layers of the banana flower until you reach the tender inner core.


Separate the small flowers inside, remove the hard stigma and style from each.


Finely chop the core and the cleaned flowers. Soak them in water with a bit of salt or lemon juice for 15–20 minutes to reduce bitterness.




2. Cook the Chana Dal:


Soak the chana dal for 1–2 hours, then drain.


Boil the chana dal in water with a pinch of turmeric until soft but not mushy. Drain and set aside.





Cooking Instructions:


1. Heat Oil: In a pan, heat mustard oil until it begins to smoke lightly (this removes its strong flavor), then reduce to medium heat.



2. Temper the Spices: Add mustard seeds and cumin seeds to the hot oil and let them splutter.



3. Sauté Aromatics: Add minced garlic, ginger paste, and green chilies. Sauté for 1-2 minutes until fragrant.



4. Add Onion and Spices: Add chopped onions and cook until golden brown. Then, add turmeric powder and salt to taste.



5. Cook Banana Flower: Add the chopped banana flower and sauté for 5–7 minutes, stirring occasionally until it softens.



6. Add Chana Dal: Mix in the cooked chana dal, combining well with the banana flower mixture. Cook for another 3–4 minutes, allowing flavors to meld.



7. Finish and Garnish: Adjust salt to taste, turn off the heat, and garnish with fresh coriander leaves.




Serving Suggestions:


Serve your Atia-style banana flower curry with steamed rice or flatbread (roti). This dish has an earthy, rich flavor with a slight bitterness balanced by the soft chana dal, making it a wholesome and satisfying meal.
