Dumma meat cooking recipe
Dumma meat (or Dum ka meat) is a traditional Hyderabadi-style slow-cooked meat dish, often made with lamb or mutton. It's richly spiced and cooked in a dum (sealed) method, where the meat simmers in its own juices. Here’s a recipe for you to try:
Ingredients
1 kg lamb or mutton, cut into pieces
1 cup yogurt
2 large onions, finely sliced
1/2 cup oil or ghee
2-3 green chilies, slit lengthwise
2 tsp ginger-garlic paste
1/2 tsp turmeric powder
2 tsp red chili powder
1 tsp garam masala powder
1 tbsp coriander powder
1 tbsp cumin powder
Salt, to taste
Fresh coriander and mint leaves, chopped
1/4 cup cream (optional, for richness)
1 tbsp lemon juice
Charcoal for the dum (optional, for a smoky flavor)
Instructions
1. Marinate the Meat:
In a large mixing bowl, combine yogurt, ginger-garlic paste, turmeric, red chili powder, garam masala, coriander powder, cumin powder, salt, and lemon juice.
Add the meat pieces and mix well to coat them evenly. Cover and marinate for at least 2 hours (overnight is ideal for deeper flavor).
2. Fry the Onions:
Heat oil or ghee in a heavy-bottomed pan. Fry the sliced onions until golden brown and crispy. Remove and set aside, reserving the oil. Once the onions have cooled, crush them gently.
3. Cooking the Meat:
In the same pan, add the marinated meat along with the crushed onions. Mix everything well.
Add green chilies, fresh coriander, and mint leaves.
Cover the pan tightly with a lid, sealing the edges with dough if possible to create a "dum." Reduce the heat to low and let it cook for about 1.5 to 2 hours, or until the meat is tender and the oil starts to separate.
4. Optional Charcoal Smoke:
For a smoky flavor, heat a small piece of charcoal until red hot. Place it in a small bowl in the center of the pan with the cooked meat. Drizzle a little oil on the charcoal and cover the pan immediately for 5-7 minutes. This will infuse a smoky aroma into the meat.
5. Finish and Serve:
Stir in cream if desired for added richness, and cook for an additional 5 minutes.
Garnish with more fresh coriander and serve hot with naan, roti, or rice.
