Sweet Kumra Meat Curry
Ingredients:
2 large kumras (sweet potatoes), peeled and cubed
500 grams of meat (chicken, beef, or lamb)
1 large onion, chopped
2 tomatoes, chopped
2-3 cloves of garlic, minced
1 inch ginger, minced
2 green chilies (optional for spice), chopped
1/2 teaspoon turmeric powder
1 teaspoon ground cumin
1 teaspoon ground coriander
Salt and pepper to taste
1 cup coconut milk (or regular milk for a lighter version)
Fresh cilantro for garnish
Instructions:
1. Prepare the Meat: Heat some oil in a large pot. Add the chopped onions and cook until golden. Add ginger and garlic and sauté until aromatic.
2. Cook the Meat: Add the meat, and cook until browned on all sides. Sprinkle turmeric, cumin, and coriander over the meat, stirring to coat.
3. Add Tomatoes and Kumra: Add the chopped tomatoes and stir well. Add the cubed kumra and cook for 2-3 minutes, letting it absorb the spices.
4. Simmer: Pour in the coconut milk, bring to a boil, then reduce heat to simmer. Cover and cook for about 30-40 minutes, until both the kumra and meat are tender.
5. Season: Add salt and pepper to taste. You can also add a pinch of sugar for a touch of extra sweetness if you prefer.
6. Serve: Garnish with fresh cilantro and serve hot with rice, flatbread, or as a standalone dish.
